The Story Behind This Breakfast Wrap 🌯❤️
This dish has been on our table for quite a while—whether as a hearty breakfast or a quick dinner.
There are plenty of times when our fridge is full of cold cuts, and I know I have to use them up before they go to waste. And on those days when I don’t feel like making a full-on meal—like a layered dish or something baked—this kind of rich, filling breakfast always saves the day. And more often than not, tortilla wraps take the lead role. 😊
This wrap is just one version of many I regularly make. Everyone in the family loves them, but we often switch up the fillings depending on what we’re in the mood for.
That’s the beauty of it—it’s super versatile, and everyone can fill their own however they like. At this point, every family member has their own “signature” stuffed tortilla combo.
This one, though, is my partner’s favorite: scrambled eggs, crispy bacon, and smoked sausage—basically everything he loves most.
If I remember correctly, it all started one morning when I asked him the usual:
“What would you like for breakfast?” Of course, he said: Scrambled eggs. But I thought, let’s make something a bit different—no harm in doing it a little differently this time. And since we both love stuffed tortillas, I figured I’d wrap his usual breakfast into something a bit more fun.
While he was chilling in the living room, I was in the kitchen, casually throwing things together.
He thought he was getting the usual scrambled eggs—nothing fancy. 😄
Then from the other room, I hear him go:
“Whoa, something smells really good!”
When it was done, I called him in. He came over, looked down at the plate, and said:
“Wait… what is this?”
I just grinned and told him,
“Breakfast!”
He raised an eyebrow and laughed:
“Oh no… is this one of your kitchen experiments again?” 😂
I laughed and said, “Yes, but I hope you'll like it.”
So he grabbed one half of the wrap, took a bite, and went:
– “Mhh… mhh… this is really good! Wow… you can make this again anytime.”
I was thrilled that he liked it so much. I took a bite too, and honestly—we both ended up eating the entire thing before anyone else in the family could even try it. 😄
Of course, since then, everyone’s had a turn and come up with their own favorite version. The best part is how quick and easy these are to put together.

📝 Ingredients

- 1 large tortilla
- 3 eggs
- 4 slices of bacon
- 2 smoked sausages (e.g., frankfurter-style), sliced
- 1 red sweet pepper (unseeded), diced
- ½ small red onion, finely chopped
- 1 stalk of spring onion, chopped
- 1 small tomato, sliced
- 3 slices of processed cheese
- 50g grated cheese (e.g., gouda or mozzarella)
- 3–4 slices pickled jalapeño (optional)
- A splash of olive oil (for sautéing)
- 1 tsp butter (for brushing)
- Freshly ground black pepper, to taste
- A pinch of salt (for the veggies)
👩🍳 Instructions
1. Cook the bacon
Start by frying 4 slices of bacon in a non-stick pan until crispy. Season them lightly with freshly ground black pepper while cooking. Once they’re golden and done, remove and set aside on a plate.
2. Sauté the veggies
In the same pan, add a tiny splash of olive oil. Add 1 finely chopped red sweet pepper (not seeded), ½ small red onion, and 1 chopped stalk of spring onion. Sprinkle with a pinch of salt to help them release moisture. Sauté over medium heat until they start to soften.
3. Add the smoked sausage
Slice the smoked sausage into rounds and add it to the pan. Let everything cook together until the sausage browns slightly and the veggies are nicely cooked down. No extra seasoning is needed—the bacon and sausage bring plenty of flavor.
4. Add the eggs & tortilla
Beat 3 eggs and pour them over the veggie and sausage mixture. Let them cook gently until just starting to set.
While the eggs are still soft, place 1 large tortilla directly on top of the mixture in the pan. Gently press it down and brush the top of the tortilla with a little butter.
5. Flip it & fill

After about 4 minutes (once the bottom is lightly browned), carefully flip the whole thing so the tortilla is now on the bottom. Add your fillings to just one half of the tortilla:
- – 50g grated cheese
- – 3 slices of processed cheese
- – a few slices of pickled jalapeño (optional)
- – 1 small tomato, sliced
- – the 4 slices of bacon you cooked earlier
6. Fold & finish
Fold the empty half of the tortilla over the loaded side to form a half-moon shape. Press down gently and cook for about 1 more minute per side, until everything is melted and golden.
7. Slice & serve
Remove from the pan, let it cool slightly, then cut in half. Serve warm, and enjoy while the cheese is still gooey!
