Chicken Burrito Recipe🌯

We absolutely love wrap recipes, and for good reason.
They're incredibly versatile and can be filled with almost anything. Whether you have leftover chicken, fresh vegetables or just a few simple ingredients sitting in the fridge, it's easy to turn them into a delicious meal. They're also perfect for taking to work because they're easy to pack, easy to eat and incredibly filling... sometimes even a little too filling, depending on just how much you decide to stuff inside!
One of the best things about this recipe is that it doesn't rely on expensive or difficult-to-find ingredients. If there's one ingredient that might not always be sitting in your kitchen, it's probably the lime. Even then, it's easy to pick up from almost any supermarket. Everything else is made from everyday ingredients that most people already have at home, making this a recipe you can prepare without planning days in advance.
The chicken tastes even better if you leave it to marinate overnight, but don't worry if you're short on time. Around 30 minutes is more than enough to let all those flavours develop. While the chicken is marinating and cooking, you can prepare everything else. Cook the rice, mix the sauces, chop the vegetables and get everything ready, so once the chicken is finished, all that's left to do is build your own burrito exactly the way you like it.
That's another reason we enjoy making this recipe so much. Everyone can customise their own wrap. Some people like extra sauce, others want more vegetables or plenty of cheese. There isn't really a wrong way to build it, and that's part of the fun. Just lay everything out on the table and let everyone make their perfect burrito.
And if you don't happen to have tortillas, don't let that stop you. Simply serve all the ingredients on a plate, add a generous drizzle of both sauces, and you'll still have a fresh, colourful and satisfying meal that's every bit as delicious.

A pinch of salt

Fresh Vegetables

1 pepper, finely diced

Cheese

150–180 g grated cheese

👨‍🍳 Instructions

1. Marinate the Chicken

Place the chicken thighs into a large bowl. Add the garlic-infused olive oil, smoked paprika, ground cumin, dried oregano, chilli flakes, garlic powder, salt, black pepper and the juice of half a lime.

If you don't have garlic-infused olive oil, regular olive oil or even sunflower oil will work just fine.

Mix everything together until the chicken is evenly coated with the seasoning.

For the best flavour, marinate the chicken overnight. If you're short on time, 30 minutes will still give you a delicious result.

2. Prepare the Sauces

While the chicken is marinating, prepare both sauces.

Mix together all the ingredients for the Prepmix Cream Sauce until smooth.

In a separate bowl, combine all the ingredients for the Prepmix Smoky Sauce and stir until well combined.

Set both sauces aside until you're ready to assemble the burritos.

3. Prepare the Vegetables

Finely dice the red onion and place it into a small bowl with the lime juice and a pinch of salt. Give it a quick stir and leave it to pickle while you prepare the remaining ingredients.

Finely dice the tomato and the pepper, then grate the cheese if you're not using pre-grated cheese.

Now everything is ready for assembling later.

4. Cook the Rice

Rinse the rice under cold water until the water runs clear.

Transfer it to a saucepan and add the water, whole garlic clove, bay leaves, salt and ground black pepper.

Bring to the boil and cook uncovered over a medium heat until almost all of the water has been absorbed.

When only a small amount of liquid remains, stir in the chopped parsley and the juice of half a lime.

Turn off the heat, cover the saucepan with a lid and leave the rice to finish cooking in its own steam for a few minutes.

5. Cook the Chicken

Heat a frying pan over a medium-high heat and cook the chicken until nicely browned on both sides and cooked through.

Transfer it to a chopping board and leave it to cool just enough so it's comfortable to handle.

Cut the chicken into bite-sized pieces.

6. Assemble the Burritos

Lay a tortilla wrap onto a clean surface.

Spread either the Prepmix Cream Sauce or the Prepmix Smoky Sauce over the tortilla as your base.

Add the rice, followed by the chicken, quick pickled onion, diced tomato and diced pepper.

Finish with the opposite sauce, sprinkle over the grated cheese and roll the tortilla up tightly.

Don't worry about making every burrito exactly the same. Feel free to leave out any ingredients or add a little extra of your favourites. That's one of the best things about homemade burritos — everyone can build their own just the way they like it.

7. Toast the Burritos

Heat a frying pan over a medium-low heat and add a generous knob of butter.

Place the burritos into the pan seam-side down.

Spread a little more butter over the tops before turning them over. A pastry brush works perfectly, but you can also use a spatula, just as shown in the video.

Toast the burritos until they're beautifully golden and crispy on all sides.

Serve immediately while the cheese is melted and everything inside is still warm.

💡 Troubleshooting & Tips

Don't overfill the wraps.

It's tempting to pack in as much filling as possible, but an overfilled burrito can be difficult to roll and may split while toasting. A little restraint here will give you a much better result.

Give the chicken a few minutes to rest.

After cooking, leave the chicken to cool slightly before cutting it into bite-sized pieces. This helps keep it juicy and makes it much easier to handle.

Short on time? Use microwave rice.

If you don't feel like cooking rice from scratch, there are plenty of great microwave rice options available in a variety of flavours. They're ready in just a few minutes and work perfectly in this recipe, making it even quicker to prepare.

Make it your own.

There are no strict rules when it comes to filling your burritos. Add more vegetables, extra cheese or a little more sauce — or leave out anything you don't enjoy. Homemade recipes are all about making food the way you like it.

🍽️ What to Serve It With

These chicken burritos are a complete meal on their own, but they're also easy to customise depending on what you're in the mood for.

If you like a little extra heat, sliced jalapeños are a fantastic addition and pair perfectly with the creamy and smoky sauces.

For something crunchy, serve your burritos with a handful of tortilla chips or your favourite crisps on the side. They're perfect for scooping up any extra sauce left on your plate.

Not in the mood for rice? Swap it for crispy fries instead. It turns the burrito into a completely different meal, but it's every bit as delicious.

A few fresh lettuce leaves also work wonderfully, either tucked inside the burrito for extra crunch or served on the side as a light, refreshing salad.

Whatever you choose, don't forget to serve a little extra Prepmix Cream Sauce and Prepmix Smoky Sauce for dipping. Trust us... you'll be glad you made a little extra!
