500 g boneless, skinless chicken thighs
1 tbsp garlic-infused olive oil
2 tsp smoked paprika
1 tsp ground cumin
1 tsp dried oregano
½ tsp chilli flakes
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
Juice of ½ lime
Rice
120 g long-grain rice
240 ml water
1 whole garlic clove
1–2 bay leaves
1 tsp salt
1 tsp ground black pepper
1 tbsp finely chopped fresh parsley
Juice of ½ lime
Prepmix Cream Sauce
5 tbsp sour cream
2 tbsp mayonnaise
1 garlic clove, grated
Juice of ½ lime
Salt
Freshly ground black pepper
1 handful finely chopped fresh parsley

4 tbsp mayonnaise
2 tbsp sour cream
1 tsp smoked paprika
1 tsp ketchup
1 tsp Sriracha
1 tsp garlic-infused olive oil
Juice of ½ lime

Quick Pickled Onion
1 small red onion, finely diced
Juice of ½ lime
A pinch of salt
Fresh Vegetables
1 large tomato, finely diced
1 pepper, finely diced

150–180 g grated cheese

👨🍳 Instructions
1. Marinate the Chicken
Place the chicken thighs into a large bowl. Add the garlic-infused olive oil, smoked paprika, ground cumin, dried oregano, chilli flakes, garlic powder, salt, black pepper and the juice of half a lime.
If you don't have garlic-infused olive oil, regular olive oil or even sunflower oil will work just fine.
Mix everything together until the chicken is evenly coated with the seasoning.
For the best flavour, marinate the chicken overnight. If you're short on time, 30 minutes will still give you a delicious result.
2. Prepare the Sauces
While the chicken is marinating, prepare both sauces.
Mix together all the ingredients for the Prepmix Cream Sauce until smooth.
In a separate bowl, combine all the ingredients for the Prepmix Smoky Sauce and stir until well combined.
Set both sauces aside until you're ready to assemble the burritos.
3. Prepare the Vegetables
Finely dice the red onion and place it into a small bowl with the lime juice and a pinch of salt. Give it a quick stir and leave it to pickle while you prepare the remaining ingredients.
Finely dice the tomato and the pepper, then grate the cheese if you're not using pre-grated cheese.
Now everything is ready for assembling later.
4. Cook the Rice
Rinse the rice under cold water until the water runs clear.
Transfer it to a saucepan and add the water, whole garlic clove, bay leaves, salt and ground black pepper.
Bring to the boil and cook uncovered over a medium heat until almost all of the water has been absorbed.
When only a small amount of liquid remains, stir in the chopped parsley and the juice of half a lime.
Turn off the heat, cover the saucepan with a lid and leave the rice to finish cooking in its own steam for a few minutes.
5. Cook the Chicken
Heat a frying pan over a medium-high heat and cook the chicken until nicely browned on both sides and cooked through.
Transfer it to a chopping board and leave it to cool just enough so it's comfortable to handle.
Cut the chicken into bite-sized pieces.
6. Assemble the Burritos
Lay a tortilla wrap onto a clean surface.
Spread either the Prepmix Cream Sauce or the Prepmix Smoky Sauce over the tortilla as your base.
Add the rice, followed by the chicken, quick pickled onion, diced tomato and diced pepper.
Finish with the opposite sauce, sprinkle over the grated cheese and roll the tortilla up tightly.
Don't worry about making every burrito exactly the same. Feel free to leave out any ingredients or add a little extra of your favourites. That's one of the best things about homemade burritos — everyone can build their own just the way they like it.
7. Toast the Burritos
Heat a frying pan over a medium-low heat and add a generous knob of butter.
Place the burritos into the pan seam-side down.
Spread a little more butter over the tops before turning them over. A pastry brush works perfectly, but you can also use a spatula, just as shown in the video.
Toast the burritos until they're beautifully golden and crispy on all sides.
Serve immediately while the cheese is melted and everything inside is still warm.

Don't overfill the wraps.
It's tempting to pack in as much filling as possible, but an overfilled burrito can be difficult to roll and may split while toasting. A little restraint here will give you a much better result.
