πŸ“Ingredients

For the Pasta and Sauce

350 g large shell pasta
500 ml double cream
100 g Parmesan, finely grated
1 medium onion, diced
4 small garlic cloves, finely chopped
A handful of fresh parsley, finely chopped
1 tsp sweet paprika
100 ml pasta water
Freshly ground black pepper, to taste
1 tbsp salt, for the pasta water

For the Chicken

370 g chicken breast
1 tbsp oil
1 tbsp butter
Salt, to taste
BBQ smoky pepper seasoning, to taste
Garlic powder, to taste
Sweet paprika, to taste

1. Cook the Pasta

Bring a large pot of water to the boil and add 1 tablespoon of salt.

Cook the large pasta shells according to the packet instructions. Before draining, reserve 100 ml of the pasta water.

Drain the pasta and set aside.

2. Season the Chicken

Season both sides of the chicken breasts with salt, BBQ smoky pepper seasoning, garlic powder and sweet paprika.

If your BBQ seasoning already contains salt, keep this in mind when adding the extra salt.

3. Pan-Sear the Chicken

Heat 1 tablespoon of oil in a large pan over medium heat.

Add the chicken and cook until beautifully golden on both sides and completely cooked through.

Near the end of cooking, add 1 tablespoon of butter. Once melted, turn the chicken in the butter to lightly coat both sides.

Remove the chicken from the pan and leave it to rest.

4. Start the Sauce

Add the diced onion to the same pan and cook until softened.

Add the finely chopped garlic and cook briefly until fragrant.

Stir in 1 teaspoon of sweet paprika.

5. Make the Creamy Sauce

Pour in 500 ml double cream and stir everything together.

Add 100 ml reserved pasta water, followed by freshly ground black pepper to taste.

Keep the heat gentle while the sauce comes together.

6. Add the Parmesan

Add most of the 100 g finely grated Parmesan, reserving a little for serving.

Stir gently until the Parmesan has melted and the sauce is smooth and creamy.

7. Add the Pasta

Add the cooked pasta shells and gently toss until they're well coated in the sauce.

Stir through most of the chopped fresh parsley, reserving a little for serving.

8. Slice and Serve

Slice the rested chicken into strips and arrange it over the creamy pasta.

Finish with the remaining Parmesan and fresh parsley.

Serve while hot and creamy.
