Golden, cheesy and irresistibly good.
We seem to have a habit of putting cheese on things. And, looking at this recipe, we're clearly not planning to stop anytime soon. 😁
These tortilla wraps started with a simple idea: make something a little different for dinner using ingredients we already know and like. Nothing particularly fancy, just something we'd genuinely enjoy eating.
We went for an enchilada-inspired version, although we're sure anyone familiar with traditional enchiladas would have a thing or two to say about our interpretation!
But that's part of the fun of cooking at home. You try things, change a few details, and occasionally end up with something you'll definitely want to make again.
And one last thing: don't underestimate the sour cream. We certainly didn't! ❤️
🌯Ingredients
For the Pork Filling
300 g minced pork
Approximately 1 tbsp cooking oil
1 small–medium onion, finely chopped
2 garlic cloves, finely chopped
½ green bell pepper, finely diced
½ red bell pepper, finely diced
6 large cherry tomatoes, quartered
1 tsp salt
½ tsp ground black pepper
1 tsp dried oregano
1 tsp dried marjoram
1 tsp sweet paprika
1 tsp smoked paprika
1 tsp hot paprika paste
200 ml water
For Assembly and Topping
4 tortilla wraps
200 g grated cheese, divided between filling and topping
1 tsp butter, for greasing the baking dish
3 tbsp sour cream, for brushing the wraps
Extra sour cream for serving (we recommend having around 300 ml available in total)
👨🍳 Instructions
Prepare the Vegetables
Finely chop the onion and garlic, then dice the red and green bell peppers into small pieces.
Cut the tomatoes into quarters.
Having everything prepared before you start cooking makes the next steps much easier, especially when things begin moving quickly in the pan.
Brown the Minced Pork
Heat approximately 1 tablespoon of cooking oil in a large frying pan over medium-high heat.
Add the minced pork and cook, breaking it apart with a spatula as it browns.
Stir occasionally to ensure the meat cooks evenly.
Add the Onion and Seasoning
Add the chopped onion, salt and ground black pepper to the pork.
Stir well and continue cooking until the onion begins to soften.
Add the Garlic and Peppers
Add the finely chopped garlic and both bell peppers.
Mix everything together and cook briefly, allowing the vegetables to soften slightly.
Add the Tomatoes and Herbs
Stir in the quartered tomatoes, oregano and marjoram.
Continue cooking gently as the tomatoes begin releasing their juices.
Add the Paprika and Water
Add the sweet paprika, smoked paprika and hot paprika paste.
Pour in 200 ml water and stir well to distribute the seasonings throughout the filling.
Reduce the heat and simmer until the pork is completely cooked, the vegetables are tender and the liquid has reduced.
The filling should remain juicy, but there shouldn't be too much loose liquid left in the pan.
Prepare the Baking Dish
Lightly grease a suitable baking dish with approximately 1 teaspoon of butter.
If you're using an air fryer, make sure the dish fits comfortably inside the basket or cooking chamber.
Assemble the Tortilla Wraps
Place a portion of the pork filling onto each tortilla.
Add some grated cheese, reserving enough to cover the wraps later.
Fold in the sides, roll the tortillas around the filling and arrange them in the prepared baking dish, seam-side down.
Repeat until all four wraps are assembled.
Add the Sour Cream and Cheese
Spread approximately 3 tablespoons of sour cream over the assembled wraps.
Sprinkle the remaining grated cheese evenly over the top.
Don't worry if the sour cream isn't perfectly smooth. It will soften as it heats beneath the cheese.
Bake Until Golden
Air Fryer
Bake at 180°C (356°F) for approximately 5–7 minutes, until the cheese is melted and lightly golden.
Conventional Oven
Preheat the oven to 180°C (356°F).
Bake for approximately 8–10 minutes, checking the cheese towards the end.
The conventional oven time is an estimate, so allow a little longer if necessary.
Since the filling is already fully cooked, the final bake is simply to heat everything through and melt the cheese.
Serve and Enjoy
Carefully remove the baking dish and let the wraps rest for a minute or two.
Serve warm with a generous spoonful of sour cream.
Cut one open, grab a fork and enjoy! ❤️
🍽️ What to Serve It With
Sour Cream
We might be slightly biased here, but sour cream is our first choice. Its cool, creamy taste works particularly well with the warm, seasoned filling.
Fresh Tomato Salad
A simple tomato salad with a little red onion and lemon juice adds freshness without making the meal feel too heavy.
Green Salad
A handful of lettuce, cucumber and a light dressing is an easy way to add something crunchy alongside the soft wraps.
Pickled Jalapeños
If you enjoy spicy food, a few pickled jalapeño slices add a lovely sharp kick.
And if you're particularly hungry, there's absolutely nothing wrong with having two wraps and calling it dinner. That's what we did! 😁
🏆 Why You'll Love This Recipe
A proper, filling dinner
Four generously filled tortilla wraps make a satisfying meal for two.
Plenty of melted cheese
There's cheese inside and on top. We weren't going to make you choose!
Easy to adapt
Prefer a little more heat? Add extra hot paprika paste. Want more vegetables? You can adjust the filling to suit your taste.
No long baking time
Once the filling is cooked, the wraps only need a short bake to melt the cheese and give them a golden finish.
Works in an air fryer or oven
You don't need any special equipment beyond a suitable baking dish and your preferred cooking method.
Great for leftovers
The filling can be prepared in advance, making the final assembly much quicker.
💡 Pro Tips
Keep the filling juicy, not watery
You want enough moisture to keep the pork tender and flavourful, but too much liquid can soak into the tortillas. Let the filling reduce slightly before assembling.
Use soft tortilla wraps
Fresh, flexible tortillas are easier to roll. If yours feel stiff, warm them very briefly before filling.
Don't put all the cheese inside
Save some for the topping. The golden, bubbly cheese is half the fun!
Keep an eye on the baking time
Every air fryer and oven behaves a little differently. Once the cheese is melted and lightly browned, the wraps are ready.
Adjust the spiciness
Hot paprika paste gives the filling a little warmth without making it overwhelmingly spicy. Use a smaller amount if you prefer milder food.
Make extra filling if you like
The cooked pork mixture is also lovely with rice or spooned over baked potatoes the next day. Just refrigerate it promptly and reheat thoroughly before serving.
And don't forget the sour cream
Three tablespoons are enough for brushing the wraps, but having extra for serving is strongly recommended. We used it generously, and we wouldn't change a thing!
🔥 Final Thoughts
We originally wanted to make something a little different with tortillas, and this turned out to be a rather good decision.
The best part was cutting into the finished wraps and seeing how well everything had come together. The filling stayed juicy, the cheese melted beautifully, and that extra spoonful of sour cream was exactly what it needed.
Would we make them again? Absolutely.
Although next time, we might need an even bigger tub of sour cream! 😂
