Creamy and Cheesy Ham Sandwich
Some days there just aren't enough hours. Work, more work, things that need doing at home β and somehow we're still expected to figure out what to eat at the end of it all. π And we know we're definitely not the only ones.
That's one of the reasons we love meals that don't need hours in the kitchen but still feel like proper food. Something warm, filling and satisfying that you can put together without turning dinner into another job on the list.
And sometimes, a simple sandwich is exactly what you need. Although, as usual, we couldn't quite leave ours simple. π A little ham and cheese quickly turned into creamy cheese sauce, mozzarella, tomato, more cheese on top... and suddenly our ordinary sandwich wasn't quite so ordinary anymore.
This recipe was inspired by the idea of a Croque Monsieur, but we weren't trying to make a completely traditional version. We used the ingredients we had, added tomato and mozzarella, and cooked the sandwiches in the air fryer. The result ended up being somewhere between a really good toasted ham and cheese sandwich and an extra-cheesy and creamy French-style hot sandwich β and we're absolutely fine with that. π
It is definitely not what we'd call a light lunch, but when you're in the mood for something warm, crispy and seriously cheesy, it does the job very well.
π Ingredients
For the Sandwiches
4 slices bread
Mustard
6 slices ham
4 thin slices tomato
4 slices mozzarella
Grated cheese, as needed
Freshly ground black pepper, optional
For the Creamy Cheese Sauce
20 g butter
20 g plain flour
200 ml milk, at room temperature
A generous pinch of nutmeg
A pinch of salt
Freshly ground black pepper, to taste
30 g grated cheese
π₯ Instructions
Make the Creamy Cheese Sauce
Start by melting 20 g butter in a small saucepan over medium-low heat.
Add 20 g plain flour and cook for around 1 minute, stirring continuously. You want the flour to cook and take on just a little colour, but don't let it become too dark.
Pour in 200 ml room-temperature milk in a steady stream while continuing to stir. There's no need to add it a tiny amount at a time β keep stirring well and the sauce should come together smoothly without becoming lumpy.
Continue cooking and stirring until the sauce thickens nicely. You're looking for a creamy consistency here, not something so thick that you could almost stand a spoon in it. π
Once thickened, remove the saucepan from the heat and transfer the sauce to a glass bowl.
Add a generous pinch of nutmeg, a pinch of salt and freshly ground black pepper to taste. Mix well, then add 30 g grated cheese.
Keep stirring until the cheese has completely melted into the sauce and you're left with a smooth, creamy mixture. It should no longer be runny, but still soft enough to spread easily inside the sandwiches and over the top.
Cover the surface with cling film while the sauce cools. This helps prevent a skin from forming on top.
Prepare Everything Else
While the cheese sauce is cooling, prepare the rest of the ingredients.
Lightly toast the four slices of bread. They only need a little colour at this stage β remember, they're going into the air fryer later as well.
Thinly slice the tomato and mozzarella.
Because we already knew the size of our bread, we knew that two slices of tomato and two slices of mozzarella would fit nicely into each sandwich, so that's all we prepared. Your bread might be bigger or smaller, so simply adjust the amount to fit yours.
Prepare the ham as well. We used three slices per sandwich, but if you want more ham and your sandwich can handle it, nobody is going to stop you. π
Finally, have your grated cheese ready.
Getting everything prepared before you start assembling makes the whole thing much easier β from here, it's basically just a matter of stacking everything together.
Start Building the Sandwiches
Place two of the lightly toasted bread slices on your work surface.
Spread each slice with mustard. We used approximately 1Β½ teaspoons per slice, which was enough for our bread, but you can adjust this to your own taste.
Next, spread a good layer of the creamy cheese sauce over the mustard.
Add the Filling
Add three slices of ham to each sandwich.
Place two thin tomato slices over the ham, followed by a layer of grated cheese.
Add two slices of mozzarella to each sandwich.
Again, don't worry too much about exact slice numbers here. Bread comes in all shapes and sizes, so use enough filling to cover yours nicely without making the sandwich impossible to close. π
Close and Top
Place the remaining two lightly toasted bread slices on top.
Spread a generous layer of creamy cheese sauce over the top of each sandwich, then finish with more grated cheese.
At this point, they're already looking fairly serious for something that started life as a ham sandwich. π
Air Fry
Carefully place the sandwiches into the air fryer.
Air fry at 180Β°C for 8β10 minutes, or until the cheese on top is completely melted, bubbling and nicely golden.
Air fryers can vary, so keep an eye on the sandwiches towards the end of the cooking time. If the cheese is already beautifully golden, there's no reason to keep them in just because the timer says so.
Let Them Cool Slightly
Once cooked, remove the sandwiches from the air fryer and give them a few minutes to cool.
You don't need to wait long β just long enough that you can actually pick them up without regretting your decisions. π
We tried to show ours as quickly as possible after cooking, but with all that hot cheese and sauce inside, we still had to wait until they were cool enough to handle.
Then cut them in half and serve while they're still warm and wonderfully cheesy.
Serving Suggestionsπ½οΈ
For us, fresh salad is one of the best things to serve alongside this sandwich. It adds something light and fresh next to all that creamy melted cheese.
I also really like eating it with some fresh tomato on the side. It's simple, but the freshness works really well with the rich sandwich.
And if you're in the mood for a little heat, add some sliced jalapeΓ±os or a drizzle of Sriracha. The spicy kick works surprisingly well with the creamy cheese sauce.
You really don't need a heavy side dish here β the sandwich is already more than filling enough on its own.

This sandwich takes familiar, inexpensive ingredients and turns them into something a little more interesting without making the recipe complicated.
The homemade cheese sauce adds a rich, creamy layer, while the grated cheese and mozzarella give you plenty of melted cheese and that lovely stretchy centre when you cut into the sandwich.
It's filling too. This isn't one of those lunches where you're wondering what else you can eat half an hour later. π
It's also very easy to adapt. You don't need a particular type or size of bread, and the amounts of ham, tomato, mozzarella and grated cheese can simply be adjusted to whatever you're using.
And despite looking quite impressive when it's cut open, most of the work is simply making a quick cheese sauce, preparing the ingredients and stacking everything together.
π‘ Pro Tips & Variations
Don't overload the sandwich
There is already cheese inside, cheese sauce inside, mozzarella, more cheese sauce on top and another layer of grated cheese to finish.
As tempting as it is to keep adding more, there is definitely a point where a sandwich becomes mostly cheese with bread acting as structural support. π
Drain fresh mozzarella well
Fresh mozzarella can contain quite a lot of liquid.
If yours is particularly wet, gently pat it dry with kitchen paper before adding it to the sandwich. This helps prevent unnecessary moisture from collecting inside.
Slice the tomato thinly
Thick tomato slices release more liquid and can make the centre too wet.
Thin slices give you the flavour and freshness without overwhelming the sandwich.
Adjust the filling to your bread
Our tiger bread slices were fairly large and thick, so three slices of ham and two slices each of tomato and mozzarella worked well.
If you're using smaller bread, simply use less. If yours is bigger, add a little more. There's no reason to force exact quantities when every loaf is different.
Don't toast the bread too much at the beginning
The bread is going into the air fryer for another 8β10 minutes, so the first toast only needs to be light.
If you make it very crispy before assembling the sandwich, it can become too hard by the time the cheese on top is golden.
Keep an eye on the air fryer
The cheese can go from beautifully golden to very dark surprisingly quickly.
Check the sandwiches towards the end and remove them once the topping is melted, bubbling and nicely browned.

Sometimes the best recipes aren't the ones you planned down to the last detail. You start with the idea of making a ham and cheese sandwich, add a little of this, then a little of that, and suddenly you've created something considerably more serious. π
That's pretty much what happened here.
The combination of ham, tomato, mozzarella, grated cheese and creamy homemade cheese sauce makes this sandwich rich and filling, while the lightly toasted bread gives it plenty of texture.
It isn't an everyday light sandwich β we'll admit that immediately. π But for a warm lunch, easy dinner or one of those days when you really want something cheesy and comforting, it's a very good option.
And like most sandwiches, there is plenty of room to make it your own. Change the cheese, adjust the filling, leave out the tomato, add some jalapeΓ±os or give it a little Sriracha if you like things spicy.
