📝 Ingredients

3 stalks leeks, sliced (dark green removed)

3 slices smoked ham, diced

1 tsp butter (for sautéing)

1 heaping tsp sour cream

3 eggs (for the omelette)

2 tbsp milk

Freshly ground black pepper

1 heaping tsp butter (for cooking omelette)

1 rectangular 50g melting cheese slice

2 slices processed cheese
-
1 egg (for the fried egg)

2 slices toast bread

Butter for brushing

Fresh parsley, chopped

Optional: sriracha mayo + fresh veggies
🥄 Instructions
1️⃣ Prep the leeks and ham
Slice the leeks into thin half-moons and dice the smoked ham.
2️⃣ Mix the omelette
Whisk 3 eggs with black pepper and 2 tablespoons of milk until smooth.
3️⃣ Cut the toast hole
Use a round cookie cutter (or small glass) to remove the center from one slice of bread.
Brush both slices — both sides — generously with butter.
4️⃣ Sauté the leeks and ham
Melt 1 teaspoon butter over medium-low heat.
Add leeks + ham and cook until lightly golden.
Stir in 1 heaping teaspoon sour cream.
Cook briefly, then set aside.
5️⃣ Lightly toast the bread
Toast the full slice on one side only — it will finish crisping later.
6️⃣ Cook the omelette base
Add 1 teaspoon butter to the pan.
Pour in the egg mixture and cook until the bottom sets, but the top is still soft.
7️⃣ Fill & fold the omelette
Add the ham-leek mix to the center.
Place the 50g cheese slice on top.
Fold the omelette edges in to form a neat square parcel.
8️⃣ Add more melty cheese
Put 2 slices of processed cheese on the folded omelette.
Place it onto the toasted bread slice — toasted side facing up.
Keep heat low so the bottom slowly crisps.
9️⃣ Fry the egg inside the cutter
Put the cutter back in the pan and crack in 1 egg.
Cover with a heat-resistant bowl or lid.
Cook until the white is mostly set.
Loosen gently with a knife and remove the cutter.
🔟 Assemble & crisp up
Place the hole-cut toast slice on top of the omelette.
Fit the fried egg into the hole.
Cook until the sandwich slides easily and the bottom is perfectly crisp.
