Whether it's hot or cold, there's not a day when we don't have a creative combination on the table.
We work, we rush, we save money - we often don't have the time or opportunity to sit down somewhere for a good burger. But that doesn't mean we have to give it up. đ
That's why the idea came: what if we combined these two in a homemade burger?
Not with traditional fries, of course, but with something special: tĂłcsni. We learned this Hungarian potato pancake from a friend and knew from the first bite that it would be a frequent guest at our place. Crispy on the outside, soft on the inside â every bite is a joy!

My partner and family fell in love with it immediately, and since then, we've been making it at least once a week. We usually make it on weekends when thereâs no rush. Thatâs when we sit down for a proper breakfast together â itâs freshly made and gone in minutes. Robert always asks for an extra scoop of the sauce, and he says itâs even better than what you get at fast food places. đ
A little kitchen mishap â and what I learned from it
I made the patty too thick, and it stuck out of the bun so much that the whole sandwich was completely out of proportion.
Let's just say it didn't really hold together - it fell apart more than it was a bite-sized burger. đ
But it also taught me the importance of balance: thinner patty, less sauce, and it fits perfectly in your hand.

- 2 burger buns
- 6 slices of ham
- 2 small vine tomatoes
- 1 leaf of head lettuce
- 4 slices of processed cheese
- œ onion, finely chopped
- 1 large pickled cucumber, finely chopped
- 1œ tablespoons ketchup
- 1œ tablespoons mayonnaise
- œ tablespoon mustard
- Salt and pepper, to taste
- 1 large potato, grated
- 1 small egg
- 1œ tablespoons flour
- Salt and pepper, to taste
- A small knob of butter for each bun half (salted or unsalted)
- 1â2 tablespoons olive oil

- Dice the onion and pickled cucumber into small cubes. Slice the vine tomatoes into thin rounds, and cut the lettuce leaf into thin strips. Set everything aside.
- Peel and grate the potato into a bowl. Add the egg, season with salt and pepper, then stir in 1œ tablespoons of flour. Mix well until fully combined. Set the mixture aside to rest while you prep the sauce.
- In a small bowl or jar (anything that works), combine the chopped onion, chopped pickle, mayonnaise, ketchup, and mustard. Season with salt and pepper to taste, then mix until smooth and creamy. Chill if you have time â it gets even better.
- Slice the burger buns in half. In a pan over medium heat, melt a small knob of butter and toast each bun half cut-side down until golden and slightly crispy. Remove and set aside.
- In the same pan, heat a little olive oil. Use a tablespoon to scoop a portion of the potato mixture into the pan and flatten it gently with the back of the spoon â you want it nice and thin so it cooks evenly. Fry over medium heat for about 5 minutes per side, until golden brown and crispy. Repeat until all the mixture is used â you should get about 4 patties from one potato.
- In a clean pan (or the same one wiped clean), quickly sear the ham slices over medium-high heat without adding any extra fat. Just enough to give them some color and crisp edges.
- Start with a layer of shredded lettuce on the bottom bun. Add a spoonful of sauce on top, then place 2 crispy potato patties per burger. Add a bit more sauce, then pile on 3 slices of seared ham. Top with sliced tomato rounds, and use up any remaining sauce over both burgers. Cap with the top bun, and⊠youâre done! đ
